Seekh Kebab Biryani is a kind of biryani slightly different from the usual kind of biryani. Seekh Kebab Biryani is perfect for very special occasions or when you are in the mood to try out something unique to eat.
This delicious meal is one that is bursting with flavors and made up with the perfectly cooked aromatic rice and spicy rich seekh kabab masala layers.

Seekh Kabab Biryani Recipe
Seekh Kabab Ingredients:
- Beef mince with fats – 500gm (1/2 kg) – Grind fine (2 or 3 times)
- Gram flour -- 2 TBSP (dry roast & sieve)
- Fried onions -- 2 TBSP
- Seekh kabab masala (Shan) -- 4 TBSP
- Ginger & garlic paste -- 1 TBSP
- Green Chili – 3 (chopped)
- Garam masala powder -- 1TSP
- Cumin powder -- 1 TSP (roasted and crushed)
- Salt -- 1/2 TSP
- Egg -- 1
- Bread slice -- 1 (soaked in water)
- Onion -- 1 medium (grind and squeeze its water)
- Coal -- to give smoke
Biryani Ingredients:
- Basmati Rice 700 gm
- Onion 1 (Chopped)
- Tomato 2 (Chopped)
- Oil 1/2 Cup
- Ginger Garlic Paste 1 TBSP
- Green Chilli 2 (Chopped)
- Green Coriander 1 TBSP (Chopped)
- Turmeric Powder 1/2 tsp
- Cumin Powder 1 tsp
- Garam Masala Powder 1/2 tsp
- Salt 1 tsp
- Red Chilli Powder 1 tsp
- Biryani Masala – 4 TBSP
- Yellow Color 1/4 tsp
- Yogurt 1/2 cup
- Bay Leaf 1
- Black Cardamom 1
- Star Anise 1
- Green cardamom 1
- Cloves 4
- Black Pepper 6
- Cumin 1 tsp
- Water as required
- Green Coriander, Mint, Green Chili, Lemon (for Granishing, if you like)

Cooking Method:
STEP#01: Make Seekh Kebabs
- In a bowl, add rice, water and soak for 20 minutes. After that boil the rice with 2 TBSP salt.
- Squeeze the water from the bread.
- Next, in a chopper, add beef mince, fried onion, ginger garlic paste, green chili, green coriander, salt, red chili powder, besan, garam masala powder, cumin powder, egg, bread slice (squeezed) and Shan seekh kebab masala and chop all into a smooth mixture.
- Take out in a bowl and keep in the refrigerator for 30 minutes.
- Now slightly grease your palms with oil or water and make seekh kababs.
- Heat oil and shallow fry the kababs for 7 minutes on medium flame, and keep aside.
- Seekh Kebabs are ready.
STEP#02: Make Masala for Biryani
- Heat the coal till red hot. Heat oil add chopped onions and sauté for 1-2 min.
- Add all garam masala and bay leaf.
- Now add ginger & garlic paste, chopped tomatoes , red chilli, coriander powder, cumin crushed, salt, biryani masala, and mix well. Cook for a minute.
- Now add yogurt mix well. Cook till gravy leaves the oil on top.
- Add fried kebabs and mix them carefully.
- Add green chilli and simmer on low flame for a minute.
- Gravy for Biryani is ready.
STEP#03: Layering for Biryani
- Take a large pot grease the bottom so the rice cannot stick at the bottom.
- Add half the rice and top them with the kabab masala then the remaining rice, spread all the garnish ingredients on top.
- Mix food colour with 2 TBSP milk and spread on rice.
- Place a piece of aluminium foil on the top center of the rice and place the burning hot coal on it. Spread few drops of oil on the coal and cover the pot with an air-tight lid and leave the rice on dum till the smoke settles. (on low flame for 5 minutes.
- After 5 minutes mix rice carefully and take out in serving platter.
Delicious Seekh Kebab Biryani is ready to be served. Serve hot with cucumber mint raita and Enjoy!
